EASY CROCKPOT CORNED BEEF

The luck of the Irish will be with you when you make this easy and tender corned beef recipe. My Dad’s birthday was March 17th and we have a wee bit of Irish in us so our family always celebrated with a corned beef. My mother didn’t use this recipe but I found the crockpot recipe to be so easy when the kids were young and we were always short on time. I still use this recipe. It’s so easy and there’s nothing to do except wait until it’s done and then slice it up. I always buy the largest corned beef I can find because it shrinks in the crockpot and I really enjoy having it the next day too.

EASY CROCK POT CORNED BEEF

4 carrots, cut into 3-inch pieces

2 onions, chopped

3-4 pound corned beef brisket with spice packet

1 cup water

2 cups apple juice

1 head green cabbage, cored and roughly chopped

Add the carrots and onions to the bottom of the 5-6 quart crockpot. Set corned beef on top. Add the apple juice and water along with the contents of the spice packet.

Cook on high 4-5 hours, depending on size, or low temperature 8-9 hours, until tender. During the last hour of cooking, add the roughly chopped cabbage on top of the beef.

Remove the beef to slice. Strain the vegetables into a bowl to serve.
