PEANUT MARSHMALLOW CLUSTERS

I was in a store during the holidays and this sweet older woman set out treats for the customers.  I always make so many cookies that I wasn’t going to take any, until I spied this little wonder. I was intrigued. It looked like nothing I had ever made before.  One bite and I was hooked! I asked what was in it and she told me but couldn’t remember the quantities and offered to send me the recipe when she got off of work, but I couldn’t wait. I ran to every Aldi’s until I found a few packages of almond bark on the shelf. I made my own recipe and I think it tastes pretty darn good. I added some red sprinkles on top, just because I can’t ever make anything plain. And that nice woman who made these….. she actually did take the time to send me the recipe. What a sweetheart! Mine is a bit different and that’s the great thing about this recipe: you can do no wrong! Hers has less peanut butter and a lot more peanuts. They are both fantastic. Enjoy!

1 package of almond bark

2 cups creamy or chunky peanut butter

3 cups mini marshmallows

2 cups Rice Krispies

1 cup peanuts

Microwave almond bark and peanut butter for approximately 2 minutes, stirring occasionally. Mix until smooth.  Do NOT over microwave.

Add mini marshmallows, Rice Krispies and peanuts. Stir until mixed completely.

Drop by spoonfuls onto wax paper. If desired, top with sprinkles. Let set and enjoy. If you are in a hurry, you can refrigerate the clusters for approximately 20 minutes to harden.
